Orange Duck 🇫🇷
Ingredients needed to cook an Orange Duck:
- Duck Leg (1 per person)
- Few gloves of garlic
- Mushrooms of your choice
- Sweet potatoes
- 2 oranges (including the zest & the juice)
- 1 shot of Grand Marnier (Or any liquor of Orange)
- 1 teaspoon of soy sauce
- Fresh herbs (bay leaf, rosemary & thyme)
How to cook the Duck Confit: (If you already have leg duck confit you can avoid doing this)
- Pre-warm the oven at 150°
- In a plate, put the duck legs, salt, pepper, few gloves of garlic, fresh herbs (keep some for the mushrooms) & some olive oil
- Cover with baking paper for the first layer and then with aluminium paper.
- Put in the oven for 3 hours to obtain a duck confit.
How to cook the Orange duck:
- Peel the orange and put the zest in boiling water and let them for 5 minutes, change the water 3 times and repeat the cooking process in order to obtain a zest that is not too sour.
- Press the orange and reserve the juice that you mix with the teaspoon of soy sauce and the shot of Grand Marnier
- Put the confit of duck legs in a pan, add the mix of orange juice, and reduce it until caramelization (it will give a lacquer to the duck legs)
- For the sides, you can gold some mushrooms with butter, one glove of garlic and the rest of the fresh herbs, and a purée of sweet potatoes.
- Dress up the plate and enjoy your dish :)
My tips:
- Save the fat from the duck leg that you can use to roast some potatoes or cook some meat
- You can use the garlic from the plate that you used for the duck confit and put them in the purée of sweet potatoes to bring more taste and a recall of the duck confit. Feel free to also add some nutmeg to the purée.
