Ramen, the Japanese Noddles Soup 🇯🇵

Ingredients needed for the ramen:

  • 4-6 pork belly slices, chicken breast or tofu
  • 4 cups chicken broth
  • 2 cups water
  • 4 garlic cloves, chopped
  • 1 onion, chopped
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 2 eggs
  • 2 packs of ramen noodles
  • 1 cup sliced mushrooms
  • 1  bok-choy cut in half
  • 1 cup sliced green onions
  • 1 sheet nori, cut into small pieces
  • Sesame seeds

Ingredients for the noodles:

  • 100 g of flour per portion
  • 40g of warm water
  • 1 pinched of salt
  • 2 pinched of bicarbonate of sodium

How to prepare the noodles:

  • In a bowl mix the flour and add up slowly the warm water mixed the bicarbonate of sodium and salt.
  • Knead the paste during 5 to 10 min using your hands.
  • Create a ball and wrap up with plastic film and let it rest for 30 min to 1 hour.
  • Spread the ball using pastry cook or a rolling mill.
  • Cut as the form you wish for the noodles using a knife or a rolling mile if you have one.

How to prepare the ramen :

  • In a large pot, cook the pork belly slices over medium heat until browned and crispy. Remove from pot and set aside.
  • In the same pot, add garlic, onion, and ginger and sauté until fragrant.
  • Pour in the chicken broth and water and stir well to combine all and bring to a boil.
  • Reduce heat to low and let the broth simmer for 30-45 minutes.
  • While the broth is simmering, bring a separate pot of water to a boil and cook the eggs for 6-7 minutes for a soft-boiled egg. Once cooked, remove the eggs from the hot water and place in a bowl of cold water.
  • In the same pot of boiling water, cook the ramen noodles according to the package instructions.
  • Once the noodles are cooked, drain them and set aside.
  • In a separate pan, sauté the mushrooms, bok-choy, and green onions until tender.
  • To serve, place the cooked ramen noodles in a bowl, add the sautéed vegetables, and pour the hot broth over them.
  • Top with the crispy pork belly slices, soft-boiled egg, nori, and sesame seeds.

Recommendations:

  • If you want more crispy flavour you can fry the chicken, tofu or pork belly using breadcrumbs, eggs and flour.
  • If you have too much noodles, you can freeze them and cook them just by putting them into boiling water for 1 min to cook them.
