Shakshuka, a Maghreb break-first

Ingredients needed:

  • 3-4 tomatoes per person
  • 2-3 eggs per person
  • 1 red or green pepper
  • 1 spoon of concentrated tomato
  • 5 cl of water
  • 1 onion
  • 3 gloves of garlic
  • 1 chilly pepper
  • Parsley
  • Paprika powder

How to cook the shakshuka:

  • Dice all the ingredients in cubes
  • In a hot pan, add a spoon of olive oil, then the onion, garlic and chilly pepper and the concentrated tomato and cook them for 2 min
  • After 2 min, add up the tomatoes, the pepper, the paprika and the water, stir and cook it for 5 to 10 min
  • Create little holes in the pan to create space for the eggs, crack the eggs and cover the pan for 3 to 5 min until the eggs are cooked
  • To finish add as a topping the chopped parsley
